This beet hummus could soon become your go-to for a snack or holiday party appetizer. It pairs well with vegetables (think cucumbers, celery and carrots). They're fairly low in calories but high in fiber and flavor. We hope you enjoy this recipe as much as we did!
- 2 large beets, roasted, cooled and peeled
- 2 cloves garlic
- 1/4 cup Tahini
- 1 tsp salt
- 2 tbsp. olive oil
- 1 tsp cumin
- 5 tbsp. lemon juice
After beets have been roasted and peeled (you might also find them pre-cooked and peeled in the grocery store), quarter beets and place in food processor. Blend until smooth. Add all other ingredients but olive oil, and blend until smooth. Remove from food processor into mixing bowl, add olive oil. Let chill for 30 minutes in refrigerator before serving. Enjoy!
