- 1 head fresh cauliflower chopped, cooked and mashed
- ¾ cup reduced-fat shredded cheddar cheese
- 3 eggs
- 2 tablespoons 2% or whole milk
- 2 tablespoons fresh chopped green onion
- Salt and pepper to taste
Preheat oven to 350 degrees. Add mashed cauliflower to a bowl, adding all other ingredients. Stir well to combine. Pour mixture into an oven-safe dish and bake for 30-35 minutes until puffed up and golden brown.
