Fresh Cauliflower Salad

Ingredients:

  • 2-3 cups riced cauliflower
  • 1 english cucumber, peeled and chopped
  • 4 roma tomatoes, chopped
  • 1/2 red onion, chopped
  • 2 limes, cut in half
  • 1 bunch fresh cilantro, chopped
  • Pepper and garlic salt to taste

Directions:

Wash and prepare (chop) all vegetables. In a large mixing bowl, combine cauliflower, cucumber, tomatoes, red onion and cilantro. Squeeze lime juice evenly and toss. Sprinkle pepper and garlic salt to taste and toss. Chill for 30 minutes and serve! Fast Track and Low Glycemic compliant. *Great with sliced avocado!
