Easy Homemade Chicken Noodle Soup
1 lb. chicken breast
24 oz. low-sodium chicken broth
2 cups chopped celery
1 cup chopped carrots
1/2 chopped yellow onion
2 tbsp. dried parsley
2 bay leaves
100% whole wheat rigatoni, cooked and cooled to add as desired
Set crock pot or other slow-cooker to low. Add all ingredients and stir. Leave rigatoni out to add when ready to eat. Cook on low for 8 hours or until chicken is thoroughly cooked and easy to shred. Shred chicken and add back into soup. Add rigatoni as desired, 1/3 cup is a serving size. *You might also substitute whole wheat noodles for brown rice or barley.
