Kitchen Sink Vegetable Soup

Inspired by a refrigerator full of "holiday leftovers", this soup ended up being pretty tasty. We combined any and all vegetables we could scrounge up, a few whole wheat noodles and some vegetable broth. Not only will it help you meet your vegetable needs, but the whole wheat noodles are also heart healthy!

Ingredients:
-3 stalks celery, diced
-1 cup carrots, diced
-1/2 head red cabbage, chopped
-1 sweet onion, chopped
-3-4 cups low-sodium vegetable broth
-2 cups whole wheat noodles (we used elbow macaroni)
-2 cloves garlic, peeled and sliced

Directions:
In a large pot, boil vegetable broth. Add chopped vegetables, garlic and boil for 20-25 minutes. After 13-15 minutes, add whole wheat noodles to cook thoroughly. Remove from heat and let cool 15 minutes before serving. *For a complete meal, pair with cooked diced chicken or lean ground beef.
