Tasty Tuna Salad with Capers
We realize this recipe is very simple, but it's too good to not share! Tuna (canned in water), makes for a great last minute meal. It's one of our mid-week lunchtime favorites!
- 1/3 c. cooked whole wheat rotini noodles
- 3 oz. tuna, canned in water and drained
- 1 tbsp. light mayonnaise
- 1 tbsp. pickled capers
- Dash of dried thyme and onion powder
Boil water in pot on stove and cook rotini noodles according to package directions. Drain and let cool. Drain tuna fish into sink. Mix into bowl with light mayonnaise, capers, thyme and onion powder. Add whole wheat rotini noodles and mix if desired (can be enjoyed on the side). Chill for 30 minutes and enjoy!
*We make a few extra servings of whole wheat noodles to be used in recipes later on in the week.
